Black Bottom Cupcakes

Ingredients

Filling

8 oz cream cheese
1 egg
1/3 cup sugar
pinch salt
6 oz chocolate chips

Batter

1 cup sugar
1 1/2 cups flour
1/4 cup cocoa
1/2 tsp salt
1 tsp baking soda
1 cup water
1/3 cup vegetable oil
1 Tbsp vinegar
1 tsp vanilla

Directions

  1. Blend cream cheese, egg, 1/3 cup of sugar, and pinch of salt until smooth. Stir in chocolate chips and set aside.
  2. Sift together 1 cup of sugar, flour, cocoa, 1/2 tsp of salt and baking soda. Add water, vegetable oil, vinegar, and vanilla to dry ingredients. Beat until smooth.
  3. Fill paper cups 1/3 full. Spoon cream cheese mixture on top.
  4. Bake at 350 °F for 30-35 minutes.
