Brussels Sprouts with Bacon

Ingredients
3 | strips | bacon | cooked and chopped |
1 | Tbsp | extra-virgin olive oil | |
1 | shallot | chopped | |
1 1/2 | lbs | Brussels sprouts | trimmed, large ones halved |
1 | cup | chicken broth | |
salt | to taste | ||
pepper | to taste |
Directions
Brown bacon in a medium pan over medium heat. Remove to a plate lined with a paper towel. Add extra-virgin olive oil to the pan and the shallots and cook 1 to 2 minutes. Add Brussels sprouts and coat with oil then season with salt and pepper. Cook for 2 to 3 minutes then add broth. Bring broth to bubbling then reduce heat to medium low and cover. Cook for 10 minutes. Before serving top with the bacon.
