Brussels Sprouts with Bacon

Ingredients

3 strips bacon cooked and chopped
1 Tbsp extra-virgin olive oil
1 shallot chopped
1 1/2 lbs Brussels sprouts trimmed, large ones halved
1 cup chicken broth
salt to taste
pepper to taste

Directions

Brown bacon in a medium pan over medium heat. Remove to a plate lined with a paper towel. Add extra-virgin olive oil to the pan and the shallots and cook 1 to 2 minutes. Add Brussels sprouts and coat with oil then season with salt and pepper. Cook for 2 to 3 minutes then add broth. Bring broth to bubbling then reduce heat to medium low and cover. Cook for 10 minutes. Before serving top with the bacon.
