English Toffee

Ingredients
8 | oz | milk chocolate | |
3 | oz | blanched almonds | slivered |
1 | Tbsp | light corn syrup | |
1 1/4 | cup | sugar | |
1 | cup | butter | |
3 | Tbsp | water |
Directions
- Melt butter and add corn syrup, sugar, and water.
- Cook on high heat until 300 °F (about 15 minutes) stirring continuously.
- Remove from heat and quickly stir in almonds.
- Pour onto cookie sheet with sides and spread evenly.
- Let cool for 1 hour or more (freezer works).
- Remove from cookie sheet (flip onto cutting board).
- Melt half of the chocolate in the microwave (approx. 90 seconds).
- Spread chocolate evenly onto one side of toffee and let cool (again, freezer works).
- Repeat steps 7 and 8 with the other side.
Notes
- Use a candy thermometer.
- Pre-measure ingredients.
- Do not substitute margarin for butter.
