English Toffee

Ingredients

8 oz milk chocolate
3 oz blanched almonds slivered
1 Tbsp light corn syrup
1 1/4 cup sugar
1 cup butter
3 Tbsp water

Directions

  1. Melt butter and add corn syrup, sugar, and water.
  2. Cook on high heat until 300 °F (about 15 minutes) stirring continuously.
  3. Remove from heat and quickly stir in almonds.
  4. Pour onto cookie sheet with sides and spread evenly.
  5. Let cool for 1 hour or more (freezer works).
  6. Remove from cookie sheet (flip onto cutting board).
  7. Melt half of the chocolate in the microwave (approx. 90 seconds).
  8. Spread chocolate evenly onto one side of toffee and let cool (again, freezer works).
  9. Repeat steps 7 and 8 with the other side.
