Flourless Chocolate Cake

Ingredients
4 | oz | bittersweet chocolate |
1 | stick | unsalted butter |
3/4 | cup | sugar |
3 | large eggs | |
1/2 | cup | unsweetened cocoa powder |
Ganache
1/2 | cup | heavy cream |
6 | oz | semisweet chocolate |
Directions
Cake
Preheat oven to 375 °F. Butter 8–9 inch round springform pan. Line bottom with a round of buttered parchment paper.
Break chocolate up and melt with the butter, stirring until smooth. Remove from heat and stir in sugar. Add eggs and whisk well. Add the cocoa and whisk until just combined. Pour into pan.
Bake for 25 minutes or until the top has formed a thin crust. Cool for five minutes, release sides and invert onto a serving plate.
Ganache
Heat heavy cream to just boiling and remove from heat. Pour cream over semisweet chocolate and stir until melted and smooth. Let cool then spoon/pour over the cake so it drips down the sides.
