Fried Green Tomatoes

Ingredients

2 large eggs
4 cups buttermilk
2 cups panko breadcrumbs
2-3 green tomatoes sliced about 1/4 inch thick
Creek Sauce

Directions

In a shallow bowl, mix together the eggs and the buttermilk. In another bowl, place the flour. In a third bowl, the panko breadcrumbs.

Dip the tomatoes first into the flour, making sure flour covers both sides. Then dip floured tomato into the buttermilk mix (the liquid will make the flour pasty, enabling the crumbs to stick better). Coat slice with breadcrumbs, pressing lightly to make sure crumbs adhere. Cover both sides.

When all tomato slices are breaded fill a large skillet with oil about 1 inch deep. Heat oil to 350 degrees. Deep-fry the slices, a few at a time, until golden brown. Drain on paper towels. Serve with Creek Sauce.
