Hot Browns

Ingredients
4 | Tbsp | butter | |
6 | Tbsp | flour | |
3 | cups | milk | warm |
6 | Tbsp | parmesan cheese | |
1 | egg | beaten | |
8-12 | slices | toast | |
sliced | roast turkey | ||
8-12 | rashers | fried bacon |
Directions
Melt butter and add enough flour to absorb all the butter. Add milk, beating constantly and cook until it comes to a boil. Remove from heat and add cheese. Beat egg and add a portion of hot sauce to it, then add back to the sauce pan. Beat well. Season with salt and pepper.
For each hot brown, place two slices of toast on a plate, cover with turkey, pour a generous amount of sauce over turkey and toast, finally sprinlke with additional cheese if desired.
If ovenproof, place dish undr broiler until the sauce is brown and bubbly. Remove from boiler and cross two rashers of bacon on top. Serve immediatly.
Notes
Goes well with asparagus or broccoli.
