Kasekuchen (Cheesecake)

Ingredients
1 1/2 | cups | graham cracker crumbs | |
1/4 | cup | confectioner’s sugar | sifted |
6 | Tbsp | butter melted | |
1 1/2 | lbs | cream cheese | room temperature |
1 | pint | sour cream | room temperature |
1 | cup | sugar | |
6 | eggs | separated | |
3 | Tbsp | flour | |
1 | tsp | vanilla |
Directions
Preheat over to 350 °F.
For graham cracker crust, combine cracker crumbs, confectioner’s sugar, and melted butter. Push mixture into the bottom of a 9-inch, springform pan.
Beat cream cheese until soft and creamy. Add sour cream, granulated sugar, egg yolks, flour, and vanilla; beat until smooth. Beat egg whites to stiff peaks and fold into cream cheese mixture. Turn into prepared pan.
Bake for 1 hour. Turn off heat and leave the cake in the oven with the door open for an additional hour. Remove from oven too a cooling rack and it to cool completely.
