Kasekuchen (Cheesecake)

Ingredients

1 1/2 cups graham cracker crumbs
1/4 cup confectioner’s sugar sifted
6 Tbsp butter melted
1 1/2 lbs cream cheese room temperature
1 pint sour cream room temperature
1 cup sugar
6 eggs separated
3 Tbsp flour
1 tsp vanilla

Directions

Preheat over to 350 °F.

For graham cracker crust, combine cracker crumbs, confectioner’s sugar, and melted butter. Push mixture into the bottom of a 9-inch, springform pan.

Beat cream cheese until soft and creamy. Add sour cream, granulated sugar, egg yolks, flour, and vanilla; beat until smooth. Beat egg whites to stiff peaks and fold into cream cheese mixture. Turn into prepared pan.

Bake for 1 hour. Turn off heat and leave the cake in the oven with the door open for an additional hour. Remove from oven too a cooling rack and it to cool completely.
