Megan’s Triple Threat Ginger Snaps

Ingredients

1 1/2 cups butter
1 cup white sugar
1 cup brown sugar loosely packed
2 eggs
1/4 cup molasses
3 cups flour
1 Tbsp ground ginger
4 tsp baking soda
1 1/2 tsp cinnamon
1 tsp cloves
1 1/2 tsp salt
2 tsp fresh ginger grated
3/4 cup crystalized ginger finely chopped

Directions

  1. Cream butter and sugars together.
  2. Add in the eggs and molasses and beat until smooth.
  3. Add in spices except crystalized ginger.
  4. Mix together the salt, baking soda, and flour.
  5. Slowly mix the dry ingredients into the wet until fully incorporated.
  6. Gently mix in the crystalized ginger.
  7. Form into 1 to 1 1/2 inch balls then roll in sugar.
  8. Bake at 350 °F for 12-14 minutes. They should be cracked on top.
