Pumpkin Pie

Ingredients
4 | eggs | slightly beaten | |
3 1/2 | cups | pumpkin puree | |
1 3/4 | cups | sugar | |
1 1/4 | tsp | salt | |
2 1/4 | tsp | cinnamon | |
1 | tsp | ginger | |
3 1/2 | cups | evaporated milk | |
3 | pie crusts |
Directions
Mix all ingredients except pie crusts in a large bowl. Distribute contents between prepared pie crusts. Bake at 400 °F for 15 minutes. Drop temperature to 350 °F and bake for another 45 minutes. If a toothpick or knife doesn’t come out cleanly, bake for a few more minutes.
