Pumpkin Pie

Ingredients

4 eggs slightly beaten
3 1/2 cups pumpkin puree
1 3/4 cups sugar
1 1/4 tsp salt
2 1/4 tsp cinnamon
1 tsp ginger
3 1/2 cups evaporated milk
3 pie crusts

Directions

Mix all ingredients except pie crusts in a large bowl. Distribute contents between prepared pie crusts. Bake at 400 °F for 15 minutes. Drop temperature to 350 °F and bake for another 45 minutes. If a toothpick or knife doesn’t come out cleanly, bake for a few more minutes.
